ll riso all'agro dolce della mia mamma - versione aggiornata



Tralasciando il restyling fotografico, ecco a voi una ricetta da ritorno al passato. Non posso garantire che sia tutta "farina del sacco" della mia mamma ma fino ad ora non mi è mai capitato di assaggiare qualcosa di simile.
Quando si dice il buongiorno si vede dal mattino...questa era il mio piatto estivo preferito.
Pare, se non ricordo male, che fossi la sola bambina, tra sorelle e amiche ad apprezzarlo.
Il gusto agrodolce delle cipolle, rapiva i miei sensi e lo zucchero mescolato all'aceto ai miei occhi pareva una vera alchimia. 
Insomma decisamente questo è il mio "primo" anni 80' per eccellenza.
Cercare di ricrearlo, dopo molto tempo che non lo mangiavo, ha comportato un paio di tentativi e qualche lieve aggiunta e aggiornamento, suppongo, alla ricetta originale. (vedi il riso basmati che nel 1986, in Ciociaria era un'assoluta rarità)
La maggiore difficoltà, benché oggettivamente questa sia forse la ricetta più semplice mai postata...beh forse sto esagerando... è stata bilanciare la quantità di zucchero ed aceto così da ritrovare un equilibrio a me familiare.
Per la prima volta posto una ricetta del cui risultato non sono completamente soddisfatta. Non perché' non si mangiabile...lo è e come! Provare per credere! ma perché non sarà mai, per me, come è stato... perché non c’è niente di più buono di un ricordo!

Ingredienti
300 g di riso basmati
3 pomodori maturi
1 cipolla 
una quindicina si foglie di menta fresca, meglio ancora se selvatica. 
una manciata di pepe nero. 
1 cucchiaio di aceto di mele
2 cucchiaini di zucchero 

Incidere tre pomodori maturi ed bollitili per all'incirca cinque minuti finche la pelle non si sarà staccata dalla polpa. Intanto affettate una cipolla a listarelle sottili e lasciatela soffriggere per un paio di minuti in un tegamino. preparate uno sciroppo a base di acqua tiepida, direi poco più di un mezzo bicchiere, due cucchiaini di zucchero ed un cucchiaio di aceto. Unite lo sciroppo alle cipolle e lasciatele stufare fino a quando non lo avranno assorbito tutto.
Avrete poi messo dell'acqua sul fuoco per bollire il riso che, attenzione, non avrà bisogno di una lunga cottura essendo di tipo basmati.
Infine in una insalatiera mettere i pomodori, spellati, privati dei semi e ridotti a listarelle, le cipolle e le foglioline di menta finemente tritare. Quando il riso sarà pronto mescolate il tutto delicatamente come fosse un insalata. Irrorate, poi, con un olio di oliva a crudo, una spolverata di pepe nero macinato fresco e aggiustate di sale.
Lasciate raffreddare il riso  per qualche minuto cosi' i sapori si esalteranno e avrete un piatto fresco e leggero direttamente dal 1986 per quest’ estate 2011.

Leaving out the photographic restyling, here it is  a recipe coming directly from a trip into the past.
I can't guarantee that this recipe is 100% my mom's but what I know is that, so far, I've never tasted anything like this.
If is true that "a good beginning makes a good ending" ...well so I have to tell you that was my favorite  summery dish ever when a I was a child. And also, If I remember well, I was the only one between my sister and friends who loved this rise. The onions sweet and sour taste and the mix of sugar and vinegar looked to me as a true alchemy.
 Definitely I can say that this is my 1980s main course!
To try of make it again after ages I haven't tasted it has meant a couple of attempts and some variation to the original version like, for example the basmati rice I used that in the 1886 in Ciociaria was an authentic rarity.
the most difficult step for this easy recipe has been trying to find the original balance between the sugar and the vinegar so that to find again a familiar flavor.
for the first time in this blog I'm posting a recipe whose result I am not completely satisfied not because doesn't taste good ...it does! just try it! but because I realize that nothing can taste better that a memory!

Ingredients
300 g basmati rise
3 ripe tomato
1 onion
about fifteen mint leaves
ground black pepper 
1 tablespoon of apple cider vinegar
2 tea spoons of sugar
 
First of all carve the tomatos skin  and let them boil tin hot water for around 5 min.
Then slice finely a onion and fry it in a pan with olive oil for 2 min. In the main time stir in less then a glass of warm water 2 tea spoons of sugar and the vinegar. Put the syrup into the onion's pan and let them simmer until the liquid is adsorbed.
After few minutes the tomato will be ready to  be peeled and then catted as stripes, without seeds.
Cook the basmati rice and then, when ready, put it in a salad bowl whit the onion the tomato and  the chopped  fresh mint. Toss well and add some olive oil, ground back pepper and salt.
let the rise cool down  and serve it!
